grilled cheese

[notice the time stamps. it was a much longer conversation than what is here.]

xxxx: how do you make panini

me: without a panini press?

8:50 AM xxxx: oh you need one?

me: nah

make a sandwich on sturdy bread, lightly butter or brush olive oil on the outside

put it in a skillet and then put a skillet on top weighed down with cans so it flatens it

then flip it and resquish it

8:52 AM xxxx: hm ok

whats good to put on them

8:53 AM does mozzarella make good grilled cheese cheese

me: i dont think fresh does.

me: you should make a pastrami and provolone or munster

8:55 AM xxxx: whats munster

me: its good

its really mild and not obtrusive

its the kind that has the orange edges

xxxx: hm

i like swiss

me: you'd like munster

xxxx: swiss is pretty bitter sometimes

me: k so make a pastrami and swiss panini

its too hard

xxxx: it doesnt melt really

use provolone

or munster

both melt really well

xxxx: not sure if i know provolone

do i put the skillet on med

me: put cheese, meat, cheese so it glues it together

8:57 AM depends on how thick the sammy is. probably med-low to make sure it doesnt burn

provolone is a white cheese. its really mild in flavor and melts well

do these work well cold?

me: paninis? probs not

but you could make a sammy and not cook it

and it would be good

8:59 AM make sure you use sturdy bread like a roll or something

i dont like buying bread because i never eat it fast enough

9:00 AM me: buy 6 or 8 rolls and freeze half

then unfreeze them when you know you'll make sammies for a few more days

they wont matter if they're a little freezer burned because you'll be cooking them

xxxx: is there a specific bread for panini

9:01 AM me: nah

xxxx: what about ciabatta

me: yea that'd be fine it hink

9:02 AM me: munster, provolone, cheddar, moz

xxxx: ew @ chedder

me: really?

xxxx: yeah i dont like it

me: ok

xxxx: you can buy kind of singles stuff of this stuff?

9:07 AM me: well if you go to the deli you can buy small portions of cheese and meat

xxxx: like i dont want to buy packs of 8s for bread

me: then just get a loaf of bread

why

if you get ciabatta you can buy one bigone and just cut off some

xxxx: ive never finished a loaf of bread in my life

9:31 AM me: got everything figured out?

ready to make a sandwich

9:37 AM xxxx: yeah we'll see about that

how long do you cook it for

9:38 AM me: until its lightly brown and melty

probably 5-8m per side if its on lowish heat

xxxx: k

me: if its too hot the outside will burn before the cheese even gets warm

xxxx: yeah

an hour talk about how to make a grilled cheese

i think there are fancy ways to make the GC

me: like what

i put crushed red pepper and veggies in mine

xxxx: k thats fancy

i guess if you just use expensive cheese right

me: yea i guess

xxxx: im going to look it up at lunch

me: look up fancy ones?

9:48 AM you could make a brie one and put apples or pears in it

i dont like pears

thats too much like a breakfast crepe

me: dont leave the cheese and meat in the car

dont you have a fridge at work you could put it in

me: i wouldnt do it

buy a prepack thing

get a block of cheese

it will stay good for a long time

xxxx: oh a block ok

not slices

12:39 PM me: yea. get a block of munster. i think its like $3 not on sale if you get the safeway brand

and should i get multiple breads

you cant finish a loaf, why would you get multiple

xxxx: i dunno

12:53 PM ok so for the cheese, the munster and prov will be good for grilled?

me: yes they will both be good for that

for GC and panini

me: you could get a block of each or just get one kind
